Lavender Vinegar |

| Ingredients: 1 – 2 cups packed fresh lavender and flowers, washed and dried well 4 cups white wine vinegar |

| Instructions: Wash and dry the herbs thoroughly. Water may cloud the vinegar. Pack herbs into hot, sterilized glass jars using a wooden spoon. Fill with vinegar to one inch below the top of the jar. With the spoon, push the herbs down and lightly bruise them. Cover the top of the jars with plastic before putting the metal lids on. Let the vinegar and herbs steep for about 4 to 6 weeks. Then strain the flavored vinegar through a paper coffee filter. Pour the clear vinegar into hot, sterilized jars or decorative bottles and add a sprig of fresh lavender; seal. |
