lavender pudding

Prep time: 60 minutes
Cooking time: 25 minutes
Fresh cream 600ml castor sugar 160ml egg yolks x 6 vanilla pod 1/2 or 5ml extract lavender flowers and leaves 3/4 cup peel of one lemon/lime whole
Bring to boiling point cream,lavender,lemon peel. remove and let it infuse 30 minutes. Strain to remove lavender/lemon. Beat egg yolks,sugar,vanilla until thick and pale. Pour this into cream and mix well then pour into ramekin cups place in roasting tin
pour boiling waterhalf way up cups cover pan with foil and bake 160degreesC 25 minutes until just set. Cool, refrigerate overnight serve with extra whipped cream.
