Lavender Cookies 2

Delicious Lavender Cookies
Serves: 4
Prep time: 35 minutes
Cooking time: 8-10 minutes
1 cup plus 2 tablespoons all purpose flour
⅓ cup lavender sugar
A pinch of salt
4 tablespoons butter
2 – 3 tablespoons sweet white wine
16 leaves fresh lavender, well minced
Sift the flour, all but 1 tablespoon of the sugar, and the salt into a bowl. Rub in the butter until the mixture resembles bread crumbs. Make a well in the center and add the wine and lavender leaves and stir in gently. Let sit for 15 minutes, stirring every few minutes, until bonded. Then gather into a dough. Roll out dough on a floured board until ⅛-inch thick, and use a serrated knife to cut strips about 1 inch by 3 inches. Place on a greased baking sheet, twisting cookies if you like, to make them look like bows.
Bake for 8 – 10 minutes in 375⁰F oven.
